Golden Grahams S’mores Bars

I have a farmer friend.

His name is Tyler.

Our visit to his farm revealed a few things:

  1. Farms are pretty.
  2. Don’t wear sandals on the farm.
  3. Fainting goats are so weird but hilariously cute.
  4. I will have a piglet for a pet someday.
  5. Tyler cooks.

That’s right. Farmer T cooks.

And when Farmer T cooks, he doesn’t forget dessert.

I would go so far as to say that they were the best s’mores bars I’ve ever had, ever, and I don’t take that statement lightly. That’s why I made them myself within 24 hours of returning home, shortly after showering off farm smells and downloading 1,000 pictures of the piglets onto my computer.

These are perfect for summer get-togethers because, simply put, they’re BOMB. I did that just to mess with you, by the way.

The real reason they’re perfect is because everyone loves them, they’re portable, they’re easy to make, and the chocolate doesn’t get all over everybody’s everything, unless you face plant into the pan. Is there anything better in this world than gooey chocolate filling in between crispy cereal and puffy mallows? At this moment, with a s’mores bar in each of my hands, my answer is a resounding no.

Face planting in this would be so amazing right now.

Description

These easy Golden Grahams s’mores bars are made with Golden Grahams cereal. I cannot believe how simple and addicting these are!


Ingredients

Scale
  • 1 bag (10.5 oz) miniature marshmallows (5 1/2 cups)
  • 1 1/2 cups milk chocolate chips (9 oz)
  • 5 tablespoons butter or margarine
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla
  • 1 box (13 oz) Golden Grahams cereal (8 cups)


Instructions

  1. Grease 13×9-inch pan with butter. Reserve 1 cup of the marshmallows. In a large saucepan, melt the chocolate chips, butter, corn syrup and remaining marshmallows over low heat. Stir until completely melted. Remove from heat; stir in vanilla.
  2. Pour cereal into saucepan. Stir until coated with the melted chocolate mixture. Stir in remaining 1 cup marshmallows.
  3. With buttered back of spoon, press mixture in pan. Cool at least 1 hour or until firm. Store loosely covered at room temperature.

    These were tasty, although not sure why they needed the corn syrup as they were already very sweet without it. Not sure what happened I’ve made a different S’mores Bar recipe in the past that turned out fine, but these were piles, not bars. When I cut them and tried to put them in sandwich bags for a concessions stand, at my daughter’s talent show, they just fell apart. 😞 Disappointed.

    Excellent, love the addition of the corn syrup to help keep them softer and gooier. Of note our bag of mini marshmallows was 16 oz but we used the whole bag, worked fine. Also our box of cereal was not 13 oz, but it had 8 cups of cereal, anyway used the whole box of cereal and the whole bag of marshmallows and it turned out great. Of note always helpful to spray the measuring cup with cooking/baking spray before you pour in the sticky liquids makes them come out so much easier. Thank you for sharing the recipe.

    Hey girlie!! I first made these months ago, my daughter absolutely loves them, and my bf, who actually is not very find of s’mores at all, absolutely loves them!! I end up using a lasagna pan (11×15 ish) and do a double batch in them, making them super thick! And they’re usually gone in a weekend if my daughter is here. If not, one day longer. My bf with cut HUGE bars, like 4×4”, each time he has one!! I made a couple additions, actually use Hershey’s chocolate chips, whole bag, a whole bag of large marshmallows, a cup of mini marshmallows, and an extra cup of cereal. Use the mini ones on the top of the bars then an extra handful of cereal on top, kinda like a garnish. But they are absolutely magnificent!! TYSM!!!

    Made these & followed directions but mine ended up stale & gummy texture. Not sure what happened? Cereal wasn’t outdated? Thoughts?

    Just made these and I have to say, the flavor is OUT OF THIS WORLD! So yummy! I did, however, have a problem with the bars staying in bar form…Mine sort of crumbled into chunks instead of keeping their shape. Any thoughts of where I may have gone wrong?

    Thanks for posting this. I remember these from when I was a kid, and they don’t put the recipe on the box of Golden Grahams anymore. When I made it, I added a few extra chips and marshmallows to the top while it was still warm. Turned out great. Thanks again. E
